Mixed Berries
What can I make a cookie with a bag of dried mixed berries and granola?
My boyfriend is pulling an all nighter to write an extremely long paper for law school.
Im sitting here not wanting to go to sleep because I feel so bad… I DO have all of the necessities for cookie making though and I think that will brighten up his night!
HELP PLEEEASE
These are a favorite around here. You could food processor the dried berries and granola and use that in place of the oats in the recipe. If your cookie mix is still a bit dry, add enough water or milk to get it to come together properly. Good luck!
Cowboy Cookies III (I tweaked the recipe a little from the original version that’s provided in the link below.)
NGREDIENTS
* 2 cups all-purpose flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 3/4 cup butter, softened
* 3/4 cup white sugar
* 3/4 cup packed brown sugar
* 2 large eggs
* 2 teaspoons vanilla extract
* 2 cups rolled oats
* 1 cup semisweet chocolate chips
DIRECTIONS
1. Preheat oven to 375 degrees F (175 degrees C). Grease baking sheets. Sift together the flour, baking powder, baking soda, and salt. Set aside.
2. In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually stir in the sifted ingredients. Stir in the rolled oats and chocolate chips. Drop by rounded teaspoonfuls onto the prepared baking sheets.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 5 minutes before removing.
